Her new cookbook, Roots: The Definitive Compendium with over 225 Recipes (Chronicle), covers everything from the familiar (beets, carrots, potatoes) to the less so (galangal, manioc, jicama), and is creating renewed appreciation for these humble and delicious vegetables.
